I was just in Aspen a couple of weeks ago and wasn't impressed with the coverage... then again, I haven't heard great things about UT this winter either. Wherever you end up going, pray for more snow.
I-70 and north has been getting the love in CO this year. It's pretty damn good everywhere though.
You also have to consider that a couple of weeks ago was mid-January. That's still pretty early in terms of overall snowpack. Peak snowpack generally occurs in mid-April or so before melt starts to gain way on new snowfall.
