Is Burton Custom V Rocker stable at high speed??

Currently riding on my Forum Recon 158(this is what i learn snowboarding from), as i became better, i wanted more speed going down the slope, but i realized the board is not stable at high speed, kinda dicey, i feel like losing control of the board, is it because the Recon is too soft? so now, im looking at the Burton Custom V Rocker, some ppl say this board is stiff, some ppl say its soft, so is this board stable at high speed(im not trying to bomb the slope or anything, but i just want a all mountain stable board), im not into park, maybe few jumps, but i do want to learn buttering, im 5'11, 195lbs, size 10.5 boots, im looking at the 163, will it be too long for me? i dont really like the 159 tho, or you guys have other recommendation for me, that will be great too, thanks in advance.

Will my 2009 burton mission work with the ics with the retro disc?
