They can't do that without abandoning the entire belief system. They have a book and a belief. If one bit of the book is dodgy then they have to question the lot.
When the bible was compiled, there was no scientific alternative so there was no need for it to withstand rigorous scrutiny. They had no idea that it would last for 2,000 years. It is a testament to the wisdom contained in the stories that it has lasted as long as it has and continues despite its obvious weaknesses.
