I don't have my NS catalog handy right now, so I'll give you specifics if Vman doesn't beat me to it. I do know that my 157 Proto has around a 25.3cm (don't remember off hand) waist.

Size 11 boots are usually alright with boards with at least 25cm waist. Remember, the board is wider than the waist at the insert points where your boots sit on. Half and inch overhang is really small. I've had as much as 1" overhang, but I don't lay down fatty Euro carves like you have in your avatar. Mainly because we don't really have the slopes for that type of riding here or else I'd definitely give that a shot lol.

Weight and style wise, I'd say get the 160. It might be a 159cm, don't recall. Either way, it will ride slightly longer than the given length.

Anything below the 157 is going to be super soft for you so stability will become an issue in my opinion.
