usual guide seems to be shoulder + 1" - in her case thats closer to 17" instead of 20"...
My GF is 5'6" and 140 lb and her stance width is 19"...

Also maybe they use shoulders as a guide, but you're not riding the board with your arms so leg length and hip width would make more sense. Somebody with a longer inseam would likely want a wider stance all else being equal.

Like I said, everyone has to find their own comfortable setup, but 17" does sound quite narrow for a 5'8" person.
