A good plastic binding is honestly no weaker than metal. At the same pressure you'll crack it you'll bend aluminum. Either way your screwed.
Flow NX2's. Canting, full aluminum. It's really either that or Rome. Union isn't canting anything till next year and the only metal part is the heelcup. Majority of the frame is nylon.

You really don't need it. I don't know where this idea that toe caps provide that much response for a heelside turn is coming from. Sure they do someting but that's what your highback is for and a properly adjusted Flow puts the highback flush with your boot. You are instantly driving into the highback and the cable puts all that energy directly into the baseframe.
