I have two questions about customizing them:

The padding inserts for the top straps, one set is light gray, which seems softer, and a dark gray set which is stiffer. I have only ridden with the softer ones, but what difference will it actually make for me if I put the stiff ones in? Will you really be able to tell a difference?

Second, the Top straps can be moved in 3 locations:

Forward = Softest flex
Middle = medium level of support
Rear = maximum amount of support

Can someone dumb it down for me?

If it helps, I have only ridden for a total of 10 days, ride a rome crail, and can handle blues without falling.

yes there is a difference in the inserts. and teh strap locations are pretty straight forward do you want a your binding stiff so its very responsive or a lil flexible/less responsive

If you ride park, you probably want a softer flex on the binding.
