Default New Snowboard Setup - Advice

I need some advice regarding picking the right snowboard that would match my current setup:
Height: 5'11
Weight: 175
Boots: Thirty Twos - Size 10
Bindings: Union - M/L

I've been looking at one snowboard lately, but not sure what size
GNU Billy Goat 159CM or 162CM
159CM - Width 25CM
162CM - With 25.3CM

Would my boot size with with the 25CM one? or should I just move up to 25.3CM?

162 would definitely be on the large end for your size. I'd go 159 if that's the board you're settled on. That would be a good all around size for you. No worries about the width of either with a size 10 boot.

What if I was to upgrade my boots to size 10.5 - would that pose any risk for 159cm board?

Nope. Really, snowboard width doesn't become much of a concern until you you get up around a 12 unless you're talking about really short boards or you're into super aggressive Euro style carving.
