I am 5'9 175 lbs. I own three burton boards: 2008 twin 157, 2011 sherlock 157, and 2012 custom x 160. When riding the custom x, I cant help feeling like it is too long. The turn initiation takes a lot of work compared to the sherlock (I know...this is expected). My question is, would a size 158 make the turn initiation a little easier? If I went with a 156, would that be too short and not allow for my Large binding with 11.5 boot? The burton website says a 156 should have a medium binding.

2 cm is minor, its a stiffer board thats why its more work to turn. work on being more athletic with your snowboarding. the more you put in the more you get out when dealing with stiff boards.
