I've been looking at the Skate Banana, the C2BTX boards and the EC2BTX boards. What would be the best for me? I want more flex and forgiveness on landings but still have the ability to ride park or just carve around when I choose.

To add to what estremo said, the flex is not a direct factor of the camber/rocker profile. In the day of full camber decks, there were plenty of very playful decks. My 2009 Atomic Hatchet is a great example and I still ride that thing today and enjoy every minute on it even though I primarily ride C2 BTX style boards.

Based on your description, I would say that you want to have some camber in the profile for your cruising. I am not a huge fan of full rocker because I find it limiting when I want to cruise at speed or carve. I don`t find camber limiting in any significant way when it comes to park.
