Default Itching to bake a cake...

But what to bake? Ideas? Discuss. I just request no chocolate, since I already made Irish Car Bomb cupcakes for St. Patrick's day.

Nothin better than a cinnamon tea cake, or butter cake fresh out of the oven, a little butter spread on top!!!!!

Then wash it down with a cuppa!!!!!

The one cake I miss the most is Funfetti cake from the box. I know, I know, it is from a box. We have a lot of delicious cakes here, but man, the frosting and all the nasty goodness of a Funfetti cake can't be beat.

Other than that, experimental cheesecakes are always awesome.

I was in Vegas for a week and before I came back I bought 8 boxes of the stuff (with frosting as well). Needless to say, last week I signed up for a gym membership. I was chunking up big time (mid-season sogginess makes me lazy).

Lemon with a light lemon buttercream frosting and fresh fruit is always awesome this time of year (I do vegan versions so unsure how heavy the non-vegan ones might be?). Also Coconut-Lemon or Coconut-Lime.

Obviously these are in cupcake form but can easily be made into cake.

Lemon/Lemon buttercream in mini cupcakes (all vegan):



Same recipe minis with fruit (I made for a 4th of July party, hence the pattern and meltiness of the frosting haha). They all went quick, devoured by non-vegans :

My trouble in strife has a penchant for a lemon syrup cake (has coconut in it), that I make for her on the odd occasion!!!!!

* I'm not a real sweet tooth so I don't even eat it, but all that do tell me it's a winner!!!!! Not sure if they're just bein nice though?????
