Ok let me try and clarify It's not so much about variatals of cheese as it is performance traits. So.. when you buy a product in the grocery store that has cheese and is cooked in a microwave it needs to perform... ie not over melt or burn. Standard cheese doesn't work in that environment. What I do is utilize functional ingredients in combination with chemistry (fat, moisture, pH) to create a product that can withstand that cook platform and can be produce in large quantities for use in large factory food preparation

haha unfortunately... i do have pictures proving that there are people willing to drink budlight off the carpet with straws.... an on-campus college apartment carpet, even worse.
