The oil is the actual THC stripped off of the plant. So basically, the crystals get extracted from the plant without getting activated. This is mostly done by using Butane or Co2, though the second method is not as common...yet. The reason for using the butane is that butane gasses off at an incredibly low temperature.
So the process goes like this, get a bunch of green, shove it in a glass tube, cover the large opening with a fine mesh screen, then blow the butane through said tube. Now, the butane is instantly freezing the THC, pulling it off the plant, and depositing it into whatever you have for a catching unit. Pyrex glass works great for catching. Then, once you blow your butane through the tube, you are left with a liquid in your pyrex. Then you put the whole thing in a bath of near boiling water. This causes the majority of the butane to gas off and leaves you with the straight THC oil left behind. At this point, there are several things you can do, but the preferred method is to set the pyrex dish on a griddle set at 150 degrees. Then let it cook for a few minutes, scrape the oil into a pile in the center, whisk it a few times, let sit, rinse and repeat until you get the desired consitency. This also gasses off any butane that may have been left after the bath. Finally, as an additional step, some people choose to vaccuum purge the oil. This is how you get "shatter". Oil is getting huge here in WA, and I suspect CO to be on a similar path.
