I'm 5'7, 146lb and mainly ride all mountain and I was wondering if a 157cm Jibsaw would be too long for me? I know according to their sizing I should be riding 153 but I thought adding a couple cm would help freeriding but the 155s were out of stock so I'm left with the 157s

Have you looked at Rossi One LF? It’s a way better choice than to size up a freestyle/all mountain freestyle board for riding all mountain and some freeride.
It’s still quite soft, much softer than the likes like Capita Mercury and will handle what you are talking about way better than the Jibsaw (I had the Jibsaw and still own the One LF).

I'm 155lbs and used to have Jibsaw 153, it rode really well off piste though I've always felt that I should've bought the One instead.

I learned to ride on the 155 at 160lbs, it was plenty of board, the rossignol camber profile is so fun and easy to ride! I think you would be ok on the 153 or 157, the board rides short anyways.
